1, RICH CHRISTMAS PUDDING  

(SERVES 10)

INGREDIENTS:-

 

100g (4 oz) self raising flour

pinch of salt

1 x 2.5 ml spoon (1/2 tsp) grated nutmeg

1 x 2.5 ml spoon (1/2 tsp) mixed spice

75g (3 oz) shredded suet

100g (4 oz) raisins

100g (4 oz) sultanas

100g (4 oz) currants

100g (4 oz) soft brown sugar

50g (2 oz) mixed peel

1/2 lemon, grated rind

2 eggs, size 3

2 x 15 ml spoon (2 tbsp) brandy or milk

 

PREPARATION:

1) Grease a 1.2 litre (2 pint) pudding basin, place a small round of greaseproof paper in the bottom to prevent sticking.

2) Mix together the dry ingredients.

3) Add eggs, brandy or milk and mix well. Place mixture in prepared basin, cover with greaseproof paper and foil or o pudding cloth.

4) Steam for 8 hours. Allow to cool completely then store in o cool, dry place

5) When required steam for 2 hours before using.

(The addition of spirit helps the pudding keep.)

2, SPONGE:  (serves 10)

INGREDIENTS:-

 

SPONGE:

150g (5 oz) butter or margarine

150g (5 oz) caster sugar

3 eggs, size 3, beaten

225g (8 oz) self raising flour

 

SYRUP:

450 ml (3/4 pint) water

225g (8 oz) sugar

3 x 15 ml spoon (3 tbsp) instant coffee

3 x 15 ml spoon (3 tbsp) brandy

 

TO DECORATE:

300 mil '/2 pint) double cream, whipped

flaked almonds

 

PREPARATION:

1) Grease and line an 18 cm (7 inch) microwave container.

2) Cream fat and sugar together, beat in eggs with a little of the flour, then fold in the remaining flour.

3) Place mixture in prepared container and cook an FULL power far 4 1/2 minutes 65Ow (4 minutes 8OOw). Leave to stand whilst making the syrup.

4) To make the syrup: place the water and sugar in a bowl and cook on FULL power for 2 1/2 minutes 65Ow  (2 minutes 8OOw), stir after every minute until the sugar has dissolved.

5) Stir in the coffee and brandy until the coffee has dissolved.

6) Make holes all over the cake using a fine skewer and pour the syrup evenly over the cake and leave lo soak for al least 4 hours.

B Cover the cake with cream and decorate with the almonds. Store in a cool place.
