PAELLA  (Serves 6)

 

12 large green-lipped mussels

1/4 cup olive oil

1 onion, finely chopped

2 cloves garlic, chopped

1 chicken breast fillet, sliced

1 red pepper, chopped

1 green pepper, chopped

3 tomatoes, chopped (or 400g. tin)

1 teaspoon sugar

2 cups long grain rice

3 & half cups water

1/4 teaspoon ground saffron

2 bay leaves / 1/4 cup fresh parsley

1 sea trout fillet, chopped

1 large white fish fillet, chopped

250g. calamar tubes

300g. cooked prawns

150g. button mushrooms, quartered

 

     Scrub and clean mussels.  Heat oil in pan.  Add onions & garlic.  Cook, stirring until onion is soft.  Add chicken & peppers.  Cook, stirring, for 1 minute.  Stir in tomatoes & sugar.  Bring to boil.  Simmer, uncovered until almost all liquid is evaporated.

 

     Stir in rice, water, saffron & bay leaves until boiling.  Simmer uncovered, 10 minutes.  Stir in mussels, top with fish & mushrooms.  Cover, simmer about 5 minutes or until fish is cooked.  Gently stir fish, prawns and parsley through rice before serving.
